Moist Banana Bread With Frosting

I would eat a slice of this Banana Bread everyday… If I could πŸ™‚ It’s loaded with bananas. The texture is super moist and refined. And it has a little hint of ginger. I used a regular  shortening based frosting to top it off. And it was a hit!


14 Ripe Bananas

4 Cups All Purpose Flour
1 Cup Sugar

2 tsp Baking Powder

3 tsp Baking Soda
4 tbs Cornstarch
2 1/2 tsp Salt
1 tbsp Mixed Spice (nutmeg based)
2 Cups Vegetable Oil
2 tbs Vanilla
3 1/2 tbs ginger (liquid)
1 cup raisins
Prepare a baking pan.
Blend bananas and raisins with oil on high speed until smooth. Then sift flour and add to banana mixture along with sugar, baking powder, baking soda, salt, vanilla, ginger and mixed spice. Combine properly. 
Bake at 350 degrees Fahrenheit  for 30 to 35 minutes or until inserted knife comes out clean.
The Frosting: 
4 cups confectioner’s sugar
1 cup vegetable shortening
3 tbs lime juice
Beat shortening and lime juice together until fluffy. Then add sugar and beat until properly combined.
